Banana Bread Recipe
I have found it extremely difficult to find a good banana bread recipe. Mostly I have found the recipes to be too dry. That being said, my banana bread recipe has never failed me on being the most delicious. Well its not really a family recipe, I was given it in my 7th grade culinary arts class. That class was the the best part of middle school (not that there are many to choose from)!
Preheat oven to 350.
In a medium bowl stir together
1 egg
1 1/2 teaspoon of vanilla
1/4 cup plus 2 tablespoons vegetable oil
2 very ripe bananas, smashed
In a large bowl bowl mix together
1 cup flour
1/4 cup plus 2 tablespoons sugar
1/2 teaspoon baking soda
1/4 teaspoon baking powder
and a pinch of salt
Make sure each bowl is well mixed together. Then, fold the dry and liquid ingredients together until just moistened. Pour into your greased loaf pan and bake for 45-50 minutes.
Chocolate chips are always welcome and something that Joel loves in this.
